Parmigiano Reggiano, the best-loved and most imitated cheese in the world, would not be what it is without its land of origin. This extremely ancient cheese has been made in the same way at least since the Middle Ages, as described in the writings of great Italian poets of the 14th century. Cooks, gourmands, and intellectuals have long spoken of its virtues, with full-blown declarations of love scattered over time, up to the 20th century.
The ageing process is crucial in transforming Parmigiano Reggiano into the unique, universally coveted cheese it is today. The minimum ageing process is 12 months, but Parmigiano Reggiano DOP is sold from 18 to 120 months. At 18 months, the cheese exudes youthful aromas with fresh fruit, grass, flower, and milk nuances. After 24 months, the aromas intensify, culminating in a perfect balance of sweet and savoury, with a more pronounced crumbliness highlighting the cheese's characteristic grain.
At 36 months and beyond, this crumbliness is further accentuated, accompanied by spicier flavours, where fresh fruit aromas give way to more intense dried fruit nuances. At 48 months, the cheese amazes with its flavour and crumbly, grainy texture that melts in the mouth, sometimes with aromas reminiscent of dried fruit and a nutty aftertaste. The paste is straw yellow and compact, with numerous tyrosine granules.
At 60 months, the friability is further increased, presenting an amber, grainy, and mineralized paste. The taste is strong and very intense, but never spicy, with much more complex and marked, woody, smoky, spicy, and citrus scents replacing the typical aromas of younger maturations. At 72 months, the colour is amber, dry, extremely crumbly, with hints of cheese crust, spices, leather, dried fruit, and tobacco, creating a medium flavour that combines perfectly with a fortified wine.
